Griffin and I did our school shortly after breakfast today. That worked out really well. He had a full belly, he wasn't tired yet, and Sammy was content to play with Legos at our feet most of the time we were reading. It was a good homeschool day. :)
I spent most of the afternoon and evening making pumpkin muffins from scratch. Here is the recipe:
Pumpkin Muffins
1 cup all-purpose flour
1 cup packed brown sugar
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon baking soda
1/4 teaspoon ground nutmeg
1/8 teaspoon ground ginger or ground cloves
1 cup canned pumpkin
1/2 cup milk
2 eggs
1/3 cup shortening
1 cup all-purpose flour
Preheat oven to 350.
1. In a large mixing bowl combine all of the dry
ingredients except the last cup of flour.
2. Add the wet ingredients.
3. Beat with an electric mixer
on low speed til blended, and on high speed for 2 minutes.
4. Add the remaining flour and beat til blended.
5. Line muffin tin with paper baking cups.
6. Use an ice cream scoop to fill muffin cups 2/3 full.
7. Bake for 15-20 minutes.
